Tuna Noodle Casserole

I absolutely LOVE comfort food, I just don't love that it is so bad for me. I took a tuna noodle casserole recipe and modified it. Here's how it turned out...

- Boil whole wheat pasta (I used about half of this box)


- Combine 2 cans of low-sodium cream of mushroom soup, half a large bag of frozen peas, half a large bag of frozen broccoli and two small cans of tuna (Chicken of the Sea!)


- In a casserole dish, mix together the boiled pasta with the soup, tuna and veggies. Top with a thin layer of parmesan cheese and Italian seasoned bread crumbs.

- Pop that dish in the oven for about 30 minutes on 350 degrees.


- Serve up on a faux plaid/wooden plate with an old souvenir beer cup you got from your Key West vacation (filled with ice cold water, of course).
